Semi sun-dried tomatoes with herbs

Ingredients

  • 30 acorn-shaped cherry tomatoes
  • 1 clove garlic, crushed
  • 5 tbsp. extra-virgin olive oil
  • 1 tbsp. ?ower of salt
  • Freshly ground pepper
  • 2 sprigs fresh thyme
  • 2 sprigs fresh oregano
  • 2 pinches sugar

Method

  1. Preheat oven to 340°F.
  2. With a brush, lightly oil a baking tray.
  3. Wash cherry tomatoes thoroughly, dry well and halve lengthwise.
  4. Line up on an oiled tray, cut side up.
  5. Put garlic and olive oil in a bowl and mix with a fork.
  6. Brush the tomatoes with the garlic olive oil mixture.
  7. Sprinkle with salt, freshly ground pepper and ?nely chopped herbs.
  8. Finally, dust with a little sugar.
  9. Cook for 35 minutes at 300°F, cool and place in a jar.
  10. Fill to the top with Extra Virgin Olive Oil and store jar in a cool, dark place for many months.
