Marinating the meat gives the souvlaki an amazing flavor and makes it incredibly juicy. Ideally, marinate on Saturday and barbecue on Sunday, get family and friends involved.

Ingredients
2.2 lb pork, cut into bite-size pieces
MARINADE
1 tub of yogurt
1 onion, grated
1 tomato, grated
1 apple, grated
1 tsp. dried spearmint
1 tsp. hot red pepper flakes
SOUVLAKI
1 red onion, quartered
1 green bell pepper, quartered Cherry tomatoes, whole
Salt, pepper

HOMEMADE PITA BREAD
1.1 lb flour
½ sachet dry yeast powder
1 tsp. salt
1 tsp. sugar
About 1 ½ cups of lukewarm water
Method
Place the ingredients for the marinade in a bowl and mix.
Add the meat, toss ingredients together until meat is fully covered by the marinade.
Cover the bowl and place in the refrigerator. Let the meat marinate for 4 – 24 hours.
Thread the meat onto the skewers, placing vegetables between the meat pieces.
Season to taste and grill for about 3-4 minutes on each side.
PITA BREAD
Sift the flour into a bowl and add all the dry ingredients.
Mix and pour the water little by little, knead the dough until forming into into a ball and does not stick to your hands.
Cover and leave to rest and double in size for about 1 hour.
Knead the dough again.
Take pieces of dough between hands and open up into pita bread.
Heat a non-stick skillet over a medium heat and without adding any oil, cook each pita for about 3-4 minutes on each side.
