A beloved dessert you can find in almost every pastry shop in the country. Northern Greece is particularly well-known for its exceptional kariokes. This recipe is specially tailored for fasting, so you can enjoy these delights all year round.

Ingredients
7 oz sugar
0.4 pints water
2 tbsp. cocoa powder
¼ tsp. ground cinnamon
4 tbsp. cognac
9 oz walnuts, chopped
5 oz toasted breadcrumbs for sprinkling
1.1 lb melted baking chocolate
Method
Stir the sugar, water, cocoa powder and cinnamon into a pot and bring to a boil. Remove from heat.
Add the remaining ingredients: cognac, walnuts, and breadcrumbs, and combine until the mixture forms a doughy paste.
Roll the paste out into a thick sheet and cut the kariokes using a cookie cutter, or shape it into a roll (like in the chocolate cold cake recipe) and cut into slices after chilling.
Dip the kariokes in a bowl of melted baking chocolate until coated.
Put the chocolates on parchment paper to cool.
Wrap individually and store in a cool place (not the refrigerator).
TIP
The melted chocolate must be lukewarm otherwise it will stiffen up and not coat the kariokes evenly.
