Stuffed calamari from the Aegean Sea

Ingredients

  • 3 large calamari (about 2/3 lb each)
  • STUFFING
  • 1 tomato, firm and mature, skinned and deseeded, diced
  • 1 green bell pepper, diced
  • 1 yellow bell pepper, diced
  • 5 olives, finely chopped
  • 1 tbsp. capers, finely chopped
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 1/2 cup feta, crumbled
  • 2 sprigs fresh oregano
  • Salt, freshly ground pepper

Method

  1. Clean the calamari and rinse well, inside and out.
  2. Leave to strain in a colander.
  3. Using a kitchen knife, cut a small hole in the back for the air to escape.
  4. This makes stuffing the calamari easier.
  5. Put all the ingredients for the stuffing in a bowl.
  6. Mix together with a fork.
  7. Fill the calamari until ¾ full.
  8. Seal with a toothpick.
  9. Grill for about 5 minutes on each side.
  10. Grill the calamari heads at the same time to use as garnish.
  11. Remove the toothpick.
  12. Place the stuffed calamari on a bed of rocket leaves.

Drizzle with extra virgin olive oil and serve immediately, because calamari becomes tough as it cools.
