Ingredients

  • 2 cups black olives, pitted
  • 2 anchovy fillets, chopped (optional)
  • 3 tbsp. capers, desalted
  • Juice of 1 lemon
  • 1 cup extra-virgin olive oil
  • 2 tsp. red wine vinegar
  • Small pinch of oregano
  • Salt, freshly ground pepper

Method

  1. Place the olives, anchovy fillets (optional), and capers into a food processor and pulse until combined.
  2. Add the olive oil, lemon juice, vinegar, oregano, salt and freshly ground pepper.
  3. Mix well and store in the refrigerator, in a closed jar.

Serve on toasted bread, smear on pizza dough or use as bread filling.
