Out of all of the marvels of Greece, none is so widely loved as our olives! This is one of the most common meze’s (small appetizer) that you’ll find in any Greek home or Taverna. The Greek version of olive pate with intense caper and anchovy flavors.

Ingredients
2 cups black olives, pitted
2 anchovy fillets, chopped (optional)
3 tbsp. capers, desalted
Juice of 1 lemon
1 cup extra-virgin olive oil
2 tsp. red wine vinegar
Small pinch of oregano
Salt, freshly ground pepper
Method
Place the olives, anchovy fillets (optional), and capers into a food processor and pulse until combined.
Add the olive oil, lemon juice, vinegar, oregano, salt and freshly ground pepper.
Mix well and store in the refrigerator, in a closed jar.
Serve on toasted bread, smear on pizza dough or use as bread filling.
